Baked Acorn Squash

Instructions
  1. Heat oven to 400° F
  2. Cut the stem off the acorn squash and cut in half lengthwise
  3. Mix butter, brown sugar, cinnamon and salt in a bowl
  4. Add mixture to each side of the acorn squash
  5. Bake acorn squash cut side up for 45-55 minutes until tender. Set aside and let cool slightly
  6. Scoop out each side of baked acorn squash and mash with a fork
  7. Add back into each side of the cooked acorn squash
  8. Drizzle with maple syrup
  9. Top the squash with mini marshmallows. Broil until marshmallows are golden brown
  10. Add pumpkin brittle or pecan topping (optional)
