Broccoli & Cauliflower Slaw

Ingredients
  

  • 1 Head of broccoli
  • 1 Head of Cauliflower
  • 2 Carrots
  • 1/4 cup Mayonnaise
  • 1/3 cup Apple Cider Vinegar
  • 1/8 cup Sugar
  • 1 TBS Poppy Seeds
  • Salt & Pepper

Instructions
 

  • Heat saucepan with lightly salted water
  • Strip florets from broccoli & cauliflower and blanch florets for 30 seconds in hot water until slightly soft
  • Rinse florets in cold water and chill
  • Shred carrots and stems of broccoli and cauliflower in Cuisinart or hand box grater
  • Mix together mayonnaise, apple cider vinegar and sugar
  • Add chilled florets and shredded carrots to mixture
  • Add salt and pepper to taste
  • Sprinkle poppy seeds (optional)
