Broccoli & Cauliflower Slaw

Instructions
  1. Heat saucepan with lightly salted water
  2. Strip florets from broccoli & cauliflower and blanch florets for 30 seconds in hot water until slightly soft
  3. Rinse florets in cold water and chill
  4. Shred carrots and stems of broccoli and cauliflower in Cuisinart or hand box grater
  5. Mix together mayonnaise, apple cider vinegar and sugar
  6. Add chilled florets and shredded carrots to mixture
  7. Add salt and pepper to taste
  8. Sprinkle poppy seeds (optional)
