Ingredients
- 1 lb. Fresh from the Start Red Potatoes
- 1/4 cup Diced Celery
- 2 Hard Boiled Eggs
- 1/4 cup Mayonnaise
- 1/8 cup Apple Cider Vinegar
- 1/4 cup Scallions chopped
- 1/2 tsp. Celery Salt
- 1 Tbsp. Parsley chopped
- Salt and Pepper to taste

Instructions
- Bring a large pot of salted water to a boil.
- Add potatoes and cook until tender, about 15 minutes.
- Drain and cool.
- Cut potatoes, sliced or quartered. Peeling the potato is optional.
- In a separate bowl, mix all other ingredients together.
- Add the potatoes into this mixture.
- Serve warm or chilled.
