Ingredients
- 1 large Fresh from the Start Russet potato
- 1 cup diced tomatoes
- 1/2 cup fresh mozzarella cubed
- 1 Tbsp basil chopped
- 2 tsp Parsley chopped
- 1/4 cup Yellow Onion chopped
- 1 Garlic Clove minced
- 1 tsp Salt 1
- 1 tsp Pepper
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp balsamic glaze
- 2 Tbsp olive oil

Instructions
- Carefully slice potatoes 1/4-inch thick and place in a bowl with 1 Tbsp olive oil
- Toss well, add salt and pepper
- Place slices in a single layer on greased baking sheet. and bake for 10 minutes
- Using tongs flip each slice and bake for 10 more minutes
- Stir together 1 Tablespoon olive oil, chopped tomato, Mozzarella, balsamic vinegar, basil, parsley, onion and garlic in a medium bowl.
- Top the potatoes with equal amounts of tomato mozzarella mixture
- Dress the top with drizzle of balsamic glaze
