  1. Carefully slice potatoes 1/4-inch thick and place in a bowl with 1 Tbsp olive oil
  2. Toss well, add salt and pepper
  3. Place slices in a single layer on greased baking sheet. and bake for 10 minutes
  4. Using tongs flip each slice and bake for 10 more minutes
  5. Stir together 1 Tablespoon olive oil, chopped tomato, Mozzarella, balsamic vinegar, basil, parsley, onion and garlic in a medium bowl.
  6. Top the potatoes with equal amounts of tomato mozzarella mixture
  7. Dress the top with drizzle of balsamic glaze
