Instructions
  1. Preheat oven to 325°
  2. Grease and flour muffin pan.
  3. Add flour, pumpkin pie spice, salt, baking soda and baking powder to a bowl.
  4. Beat eggs, sugar, vegetable oil, pumpkin and vanilla extract in a second bowl until smooth.
  5. Stir wet ingredients into flour mixture, gently fold in zucchini.
  6. Bake muffins for 35-40 minutes in preheated oven.
  7. Allow to cool on rack for 20 minutes.
