Instructions
  1. Preheat oven to 400°
  2. Toss potato in oil and salt and pepper
  3. Bake for 40 minutes
  4. Slice the potato down the middle and scoop out the insides carefully.
  5. Put the sweet potato mash in a bowl, combine with butter, syrup, milk, cayenne, cinnamon and nutmeg.
  6. Whisk together until smooth.
  7. Use a pastry bag to pipe the sweet potato mash back inside the skin (or you can scoop it back in)
  8. Reheat in oven
  9. Add pecans topping (optional)
