Preheat oven to 400°
Toss potato in oil and salt and pepper
Bake for 40 minutes
Slice the potato down the middle and scoop out the insides carefully.
Put the sweet potato mash in a bowl, combine with butter, syrup, milk, cayenne, cinnamon and nutmeg.
Whisk together until smooth.
Use a pastry bag to pipe the sweet potato mash back inside the skin (or you can scoop it back in)
Reheat in oven
Add pecans topping (optional)
