Strawberry Upside Down Cake

Ingredients
  

For the Strawberry Topping

  • 2 Tbsp unsalted butter melted
  • 1/2 cup sugar
  • 3 cups sliced strawberries

For the Cake

  • 1 1/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 6 Tbsp unsalted butter room temperature
  • 2 Tbsp corn or vegetable oil
  • 2 eggs
  • 1/2 cup + plus 2 Tbsp milk

Instructions
 

  • Mix flour, baking powder and salt together and set aside
  • Beat butter, sugar and oil together for 5 minutes
  • Add and beat 1 egg at a time to the wet mixture
  • Mix in half of dry ingredients
  • Add milk and mix in for a minute
  • Add remaining dry ingredients

For the topping

  • Mix sugar and butter and place in a 9" x 12" cake pan
  • Layer with sliced strawberries
  • Add batter and smooth with spatula
  • Bake at 350 degrees for 35 minutes. Cover with foil and bake for 10 more minutes
  • Let cook for 35 minutes the flip over (invert) onto a serving plate
  • Cut and serve
