Strawberry Upside Down Cake

Ingredients
For the Strawberry Topping

unsalted butter

sliced strawberries
For the Cake
1 1/4

all purpose flour

tsp
baking powder
1/4
tsp
salt

unsalted butter
room temperature

Tbsp
corn or vegetable oil
2
eggs
1/2
cup + plus 2 Tbsp
milk
Instructions
Mix flour, baking powder and salt together and set aside
Beat butter, sugar and oil together for 5 minutes
Add and beat 1 egg at a time to the wet mixture
Mix in half of dry ingredients
Add milk and mix in for a minute
Add remaining dry ingredients
For the topping
Mix sugar and butter and place in a 9" x 12" cake pan
Layer with sliced strawberries
Add batter and smooth with spatula
Bake at 350 degrees for 35 minutes. Cover with foil and bake for 10 more minutes
Let cook for 35 minutes the flip over (invert) onto a serving plate
