Preheat oven to 350
Cut cauliflower into 1-inch florets
Place cauliflower in bowl add 2 Tbsp of EVOO, salt & pepper
Toss and place onto baking sheet and bake for 15-20 minutes or until golden brown, then let cool
In medium saucepan add remaining 2 Tbsp EVOO, shallots and garlic and sauté for 2-3 minutes until soft. Add spinach continue to mix.
Add cream cheese and sour cream to spinach mixture
In food processor add cauliflower and puree for one minute. Add spinach mixture and pulse for 2-3 minutes.
Add cauliflower dip back in medium sauce pan and on medium heat add the half and half, parmesan and cheddar cheese.
Enjoy with some tortilla chips or even some fresh cut veggies
