Potato Muffins

Servings 6 muffins

Ingredients
  

  • 1 russet potato
  • 1/4 cup milk
  • 2 Tbsp butter
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt and pepper
  • 1.5 tsp Parmesan cheese
  • 2 tsp shredded cheddar cheese
  • 1 Tbsp chives chopped, use half to garnish
  • 1 tsp corn starch

Instructions
 

  • Preheat oven to 375 F
  • Peel and cube potato and put in small pot and cover with water. Bring to boil and cook 15-20 minutes or until soft
  • Strain and mash potato
  • Mix in milk and butter
  • Season with garlic powder, onion powder, salt and pepper
  • Add Parmesan, cheddar cheese, corn starch and chives
  • Spray muffin tins and spoon mixture into 3/4 of the tin
  • Bake for 20-25 minutes or until golden brown
  • Top with some sour cream and chopped chives
