Pumpkin Zucchini Muffins

Ingredients
  

  • 3 cups All-Purpose Flour
  • 1 1/2 Tbsp Pumpkin Pie Spice
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 eggs
  • 2 1/4 cups white sugar
  • 1/2 cup vegetable oil
  • 1/2 cup canned pumkin
  • 1 Tbsp vanilla extract
  • 2 1/2 cups grated zucchini

Instructions
 

  • Preheat oven to 325°
  • Grease and flour muffin pan.
  • Add flour, pumpkin pie spice, salt, baking soda and baking powder to a bowl.
  • Beat eggs, sugar, vegetable oil, pumpkin and vanilla extract in a second bowl until smooth.
  • Stir wet ingredients into flour mixture, gently fold in zucchini.
  • Bake muffins for 35-40 minutes in preheated oven.
  • Allow to cool on rack for 20 minutes.
