Fresh Blueberry Muffins

Treat yourself to these delicious muffins made with our own fresh blueberries

  • 3 1/2 cups sifted all-purpose flour
  • 2 Tbsp baking powder
  • 3/4 cup sugar
  • 5 eggs, slightly beaten
  • 3/4 cup milk
  • 1/4 cup heavy cream
  • 1 1/2 Tbsp vanilla extract
  • 1 Tbsp lemon zest
  • 2 Tbsp honey
  • 5 ounces unsalted butter melted and cooled
  • 4 cups fresh blueberries
  • 2 Tbsp sugar, raw (for topping)
  • pinch salt, optional


  • Heat oven to 425 degrees
  • Mix all ingredients together. Stir in eggs, milk, vanilla, lemon zest, honey and butter. Do not overmix.
  • Carefully stir in berries
  • Grease the top of large muffin tins. Insert paper cups and spoon batter to the top of the paper cups. Sprinkle generously with sugar in the raw.
  • Reduce heat to 400 degrees, place muffin tins on middle shelf of oven. Bake for 25 minutes, until muffins are golden brown. Remove from muffin tins and cool.
