Twice Baked Sweet Potato
Ingredients
- 1 Sweet Potatoe
- 1 Tbsp. Maple Syrup
- 1 Tbsp. Butter
- 1/4 Cup Milk
- 1/8 tsp. Cayenne
- 1/8 tsp. Nutmeg
- Salt and Pepper to taste
- Pecans Optional
Instructions
- Preheat oven to 400°
- Toss potato in oil and salt and pepper
- Bake for 40 minutes
- Slice the potato down the middle and scoop out the insides carefully.
- Put the sweet potato mash in a bowl, combine with butter, syrup, milk, cayenne, cinnamon and nutmeg.
- Whisk together until smooth.
- Use a pastry bag to pipe the sweet potato mash back inside the skin (or you can scoop it back in)
- Reheat in oven
- Add pecans topping (optional)
