Corn Fritters
Ingredients
- 1/2 cup All-Purpose Flour
- 1/4 tsp baking powder
- 3/4 cup cup sparkling water or club soda
- 1 cup fresh corn
- Vegetable Oil
- Scallions for garnish
Instructions
- Whisk all ingredients together
- Heat vegetable oil in a skillet. Line baking sheet with paper towels
- Scoop 2-3 Tablespoons of batter into the heated skillet
- Cook 2-3 minutes on each side or until golden brown. Let cool on paper towel.
- Garnish with scallions and serve with horseradish sauce
