Baked Acorn Squash
Ingredients
- 1 Acorn squash
- 2 Tablespoons butter
- 1 Tablespoon brown sugar
- 1/4 teaspoon cinnamon
- pinch of salt
- maple syrup
- mini marshmallows
- pecans or pumpkin brittle optional
Instructions
- Heat oven to 400° F
- Cut the stem off the acorn squash and cut in half lengthwise
- Mix butter, brown sugar, cinnamon and salt in a bowl
- Add mixture to each side of the acorn squash
- Bake acorn squash cut side up for 45-55 minutes until tender. Set aside and let cool slightly
- Scoop out each side of baked acorn squash and mash with a fork
- Add back into each side of the cooked acorn squash
- Drizzle with maple syrup
- Top the squash with mini marshmallows. Broil until marshmallows are golden brown
- Add pumpkin brittle or pecan topping (optional)
