Strawberry Pop Heart Recipe
Ingredients
- 8 oz cold butter 2 sticks
- 2 1/2 cups flour
- 1 Tbsp sugar
- 1/2 tsp salt
- 1/2 cup cold water
- 16 oz fresh strawberries
- 1/4 cup sugar
- 1 tsp lemon zest 1/2 lemon
- 1 Tbsp lemon juice 1/2 lemon
- 1/4 cup cream cheese
- 1 Tbsp homemade jam
- 1 cup powdered sugar
- 1 Tbsp milk
Instructions
Dough Instructions
- In large mixing bowl mix flour sugar and salt together
- Add butter and mix until the chunks are medium and small pieces
- Slowly add the cold water until the dough comes together (you may need to add more cold water)
- Transfer dough to floured surface and split into two flattened disks
- Wrap with saran wrap and refrigerate for 2-4 hours or overnight
Jam Instructions
- Wash strawberries and cut the ends off them
- Cut into quarters and add to medium saucepan with sugar lemon zest and juice
- Cook for 10-15 min or until it thickens
- Place jam in fridge for 20-30 minutes
Pop Heart Assembly
- Pre heat oven to 375
- Once dough is rested roll out both disks to 1/8-inch thickness and cut out rectangles or whatever cookie cutter you may have at home
- Spoon 1-2 tsp of cream cheese depending on the size you choose for your pop tart and spread out leaving one inch around the sides plain
- Spoon 1-2 tsp of jam on top of the cream cheese
- Using egg wash, brush around the sides and place the top on each one and with a fork pierce the sides together to keep it from coming apart
- Line baking sheet with parchment and place pop tarts on top
- Brush the pop tarts with egg wash and prick air holes on the top surface
- Bake the pop tarts for 20-25 minutes at 375 while rotating them halfway through
- They will be done when they have a nice golden-brown color
- Remove from oven and transfer to cooling rack
- Once cooled off you can add a glaze on top or just eat them as is
- For the glaze add the jam and powdered sugar into mixing bowl and mix on medium high speed until it has a nice thick consistency you may need to add a little milk to get the right texture
- Drizzle glaze over pop tarts and enjoy!
