Strawberry Upside Down Cake
Ingredients
For the Strawberry Topping
- 2 Tbsp unsalted butter melted
- 1/2 cup sugar
- 3 cups sliced strawberries
For the Cake
- 1 1/4 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 6 Tbsp unsalted butter room temperature
- 2 Tbsp corn or vegetable oil
- 2 eggs
- 1/2 cup + plus 2 Tbsp milk
Instructions
- Mix flour, baking powder and salt together and set aside
- Beat butter, sugar and oil together for 5 minutes
- Add and beat 1 egg at a time to the wet mixture
- Mix in half of dry ingredients
- Add milk and mix in for a minute
- Add remaining dry ingredients
For the topping
- Mix sugar and butter and place in a 9" x 12" cake pan
- Layer with sliced strawberries
- Add batter and smooth with spatula
- Bake at 350 degrees for 35 minutes. Cover with foil and bake for 10 more minutes
- Let cook for 35 minutes the flip over (invert) onto a serving plate
- Cut and serve
