Buffalo Cauliflower Dip
Ingredients
- 1 medium sized cauliflower
- 2 tsp chopped shallot
- 1 tsp salt and pepper
- 2 Tbsp olive oil
- 2 Tbsp butter
- 1/4 cup Franks Red Hot
- 1/4 cup sour cream
- 2 Tbsp cream cheese
- 1/4 cup shredded mozzarella
- 1/4 cup shredded cheddar
- 1/8 cup crumbled blue cheese
- 3 Tbsp milk
Instructions
- Preheat oven to 375
- Cut cauliflower into small florets
- Toss cauliflower with olive oil, salt, pepper & shallots
- Place cauliflower mixture on baking sheet and bake for 20 minutes(rotating them halfway through)
- Once golden-brown remove cauliflower from oven and let cool
- In medium sized saucepan heat hot sauce and butter (make sure to mix till incorporated)
- In food processor or blender, place 3/4 of the cauliflower mixture, cream cheese, sour cream & hot sauce
- Blend for two minutes
- Place mixture into oven proof container and add the rest of the cauliflower, shredded cheese, and milk
- Crumble blue cheese on top
- Place in oven for 10-15 minutes or until golden on top
- Enjoy with chips or celery and carrot sticks
- If you want the mixture to be thinner just add more milk to get the texture you would like
