Southern Style Potato Salad
Ingredients
- 24 oz FFTS red bite potatoes
- 1/4 cup chopped celery
- 2 TBSP shallots chopped
- 2 hard boiled eggs chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 TBSP pickled relish
- 1/4 cup scallions chopped
- salt & pepper to taste
Instructions
- Cover red potatoes with cold water in medium size pot and bring to a boil and simmer for 20 min or until done
- Drain and let cool
- Slice potatoes into ¼ inch rounds and place into medium size bowl
- In separate pot bring water to boil with 1 tsp white vinegar
- Once boiling place two eggs and slow boil for 15min (this can be done ahead of time)
- Remove eggs and put in cold water and peel
- Chop hard boiled eggs and add to potatoes
- Add chopped celery, shallots, mayo, sour cream, pickled relish, scallions and salt and pepper to taste and mix all together
- Serve as a side for your next BBQ! Enjoy!
