Loaded Potato

Ingredients
- 1 Russet Potato
- Toppings can include: parsley, broccoli, cheddar cheese, black beans, guacamole, sour cream, ham, olives, chives, tomatoes
Instructions
- Preheat oven to 425 degrees
- Wash the potato
- Poke the potato with a fork to create small holes
- Rub the skin with olive oil
- Bake for 45-60 minutes or until skin is crisp and you can pierce the potato with a fork
- Slice open the potato and load it with your favorite toppings
