Asian Style Potatoes
Ingredients
- 1 lb Potatoes Cut into 1/3 rounds
- 1 Tbsp Sesame Oil
- 1 Garlic Clove minced (1/2 tsp)
- 2 Tbsp Water
- 2 Tbsp Soy Sauce
- 1 Tbsp Rice Vinegar
- 1 Tbsp Honey
- 1/2 tsp Corn Starch
- 1/8 tsp Red Pepper Flakes
- 1/2 tsp White Sesame Seeds
- 1/2 tsp Black Sesame Seeds
- 1/2 inch Piece of Ginger grated
- 2 Scallions thinly sliced
Instructions
- Rinse potatoes and slice into 1/3 inch rounds
- Heat medium size skillet non stick on low and add sesame oil followed by potatoes (don’t overheat)
- Cook on medium low for 5 minutes, add garlic and cook for another 2 minutes or until garlic begins to lightly brown
- In bowl mix soy sauce, water, corn starch, rice vinegar, honey, red pepper flakes and ginger
- Add mixture to pan and cook on medium for about 4 minutes (covered)
- Uncover and add sesame seeds and cook for another 5 minutes to crisp up potatoes
- Top with sliced scallions and enjoy!
