Asian Style Potatoes

Ingredients
  

  • 1 lb Potatoes Cut into 1/3 rounds
  • 1 Tbsp Sesame Oil
  • 1 Garlic Clove minced (1/2 tsp)
  • 2 Tbsp Water
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Rice Vinegar
  • 1 Tbsp Honey
  • 1/2 tsp Corn Starch
  • 1/8 tsp Red Pepper Flakes
  • 1/2 tsp White Sesame Seeds
  • 1/2 tsp Black Sesame Seeds
  • 1/2 inch Piece of Ginger grated
  • 2 Scallions thinly sliced

Instructions
 

  • Rinse potatoes and slice into 1/3 inch rounds
  • Heat medium size skillet non stick on low and add sesame oil followed by potatoes (don’t overheat)
  • Cook on medium low for 5 minutes, add garlic and cook for another 2 minutes or until garlic begins to lightly brown
  • In bowl mix soy sauce, water, corn starch, rice vinegar, honey, red pepper flakes and ginger
  • Add mixture to pan and cook on medium for about 4 minutes (covered)
  • Uncover and add sesame seeds and cook for another 5 minutes to crisp up potatoes
  • Top with sliced scallions and enjoy!
