Baked Acorn Squash

Servings 2 servings


  • 1 Acorn squash
  • 2 Tablespoons butter
  • 1 Tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • pinch of salt
  • maple syrup
  • mini marshmallows
  • pecans or pumpkin brittle optional


  • Heat oven to 400° F
  • Cut the stem off the acorn squash and cut in half lengthwise
  • Mix butter, brown sugar, cinnamon and salt in a bowl
  • Add mixture to each side of the acorn squash
  • Bake acorn squash cut side up for 45-55 minutes until tender. Set aside and let cool slightly
  • Scoop out each side of baked acorn squash and mash with a fork
  • Add back into each side of the cooked acorn squash
  • Drizzle with maple syrup
  • Top the squash with mini marshmallows. Broil until marshmallows are golden brown
  • Add pumpkin brittle or pecan topping (optional)
