Bourbon Sweet Potatoes
- 1 lb Fresh from the Start™ Sweet Potatoes
- 1/2 stick Butter
- 2 Tbsp. Light Brown Sugar
- 1/4 Cup Bourbon
- Peel and chop the potatoes
- Bring a large pot of salted water to a boil. Add potatoes and cook until soft (20-30 minutes)
- Strain the potatoes
- Mash or use mixer to blend potatoes
- In a separate pan, cook bourbon, butter and brown sugar for 5 minutes. Then mix in with potatoes.
- Finish with salt and pepper to taste
