Broccoli Artichoke Dip
Ingredients
- 1 head of broccoli
- 1 can artichokes
- 1 oz butter
- 1 TBSP chopped shallot
- 1 tsp chopped garlic
- 4 oz cream cheese
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 TBSP grated parmesan
Instructions
- Bring medium sized pot of water to boil
- Cut broccoli into florets and add to boiling water
- Cook broccoli for 5 minutes or until tender
- Once broccoli is done, strain and chop
- Open can of artichokes and strain and chop them into small size pieces
- Place butter in small pot and cook on low heat. Add chopped shallots and garlic and sauté for 2 minutes
- Add chopped broccoli and artichokes and mix well
- Remove ½ mixture and place into food processor. Add sourcream, mayo and parmesan in food processor. Mix until you have smoothconsistency. Add to a bowl. Fold in the remaining chopped mixture. Serve withchips or veggie sticks. You can serve this dip cold or warm!
