Broccoli & Cauliflower Slaw
Ingredients
- 1 Head of broccoli
- 1 Head of Cauliflower
- 2 Carrots
- 1/4 cup Mayonnaise
- 1/3 cup Apple Cider Vinegar
- 1/8 cup Sugar
- 1 TBS Poppy Seeds
- Salt & Pepper
Instructions
- Heat saucepan with lightly salted water
- Strip florets from broccoli & cauliflower and blanch florets for 30 seconds in hot water until slightly soft
- Rinse florets in cold water and chill
- Shred carrots and stems of broccoli and cauliflower in Cuisinart or hand box grater
- Mix together mayonnaise, apple cider vinegar and sugar
- Add chilled florets and shredded carrots to mixture
- Add salt and pepper to taste
- Sprinkle poppy seeds (optional)
