Cauliflower Spinach Dip
Ingredients
- 1 Head of Cauliflower
- 2 cups Spinach
- 1 tsp Garlic chopped
- 2 Tbsp Shallots chopped
- 4 Tbsp Extra-Virgin Olive Oil
- 4 oz Cream Cheese
- 1/2 cup Sour Cream
- 1/4 cup Parmesan Cheese
- 1/4 cup Shredded Cheddar Cheese
- 1/2 cup Half & Half
- 1/2 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat oven to 350
- Cut cauliflower into 1-inch florets
- Place cauliflower in bowl add 2 Tbsp of EVOO, salt & pepper
- Toss and place onto baking sheet and bake for 15-20 minutes or until golden brown, then let cool
- In medium saucepan add remaining 2 Tbsp EVOO, shallots and garlic and sauté for 2-3 minutes until soft. Add spinach continue to mix.
- Add cream cheese and sour cream to spinach mixture
- In food processor add cauliflower and puree for one minute. Add spinach mixture and pulse for 2-3 minutes.
- Add cauliflower dip back in medium sauce pan and on medium heat add the half and half, parmesan and cheddar cheese.
- Enjoy with some tortilla chips or even some fresh cut veggies
