Cauliflower Spinach Dip

Ingredients
  

  • 1 Head of Cauliflower
  • 2 cups Spinach
  • 1 tsp Garlic chopped
  • 2 Tbsp Shallots chopped
  • 4 Tbsp Extra-Virgin Olive Oil
  • 4 oz Cream Cheese
  • 1/2 cup Sour Cream
  • 1/4 cup Parmesan Cheese
  • 1/4 cup Shredded Cheddar Cheese
  • 1/2 cup Half & Half
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions
 

  • Preheat oven to 350
  • Cut cauliflower into 1-inch florets
  • Place cauliflower in bowl add 2 Tbsp of EVOO, salt & pepper
  • Toss and place onto baking sheet and bake for 15-20 minutes or until golden brown, then let cool
  • In medium saucepan add remaining 2 Tbsp EVOO, shallots and garlic and sauté for 2-3 minutes until soft. Add spinach continue to mix.
  • Add cream cheese and sour cream to spinach mixture
  • In food processor add cauliflower and puree for one minute. Add spinach mixture and pulse for 2-3 minutes.
  • Add cauliflower dip back in medium sauce pan and on medium heat add the half and half, parmesan and cheddar cheese.
  • Enjoy with some tortilla chips or even some fresh cut veggies
