Potato Caprese Bruschetta

Ingredients
  

  • 1 large Fresh from the Start Russet potato
  • 1 cup diced tomatoes
  • 1/2 cup fresh mozzarella cubed
  • 1 Tbsp basil chopped
  • 2 tsp parsley chopped
  • 1/4 cup yellow onion chopped
  • 1 garlic clove minced
  • 1 tsp salt 1
  • 1 tsp pepper
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp balsamic glaze
  • 2 Tbsp olive oil

Instructions
 

  • Carefully slice potatoes 1/4-inch thick and place in a bowl with 1 Tbsp olive oil
  • Toss well, add salt and pepper
  • Place slices in a single layer on greased baking sheet. and bake for 10 minutes
  • Using tongs flip each slice and bake for 10 more minutes
  • Stir together 1 Tablespoon olive oil, chopped tomato, Mozzarella, balsamic vinegar, basil, parsley, onion and garlic in a medium bowl.
  • Top the potatoes with equal amounts of tomato mozzarella mixture
  • Dress the top with drizzle of balsamic glaze
