Potato Muffins
Ingredients
- 1 russet potato
- 1/4 cup milk
- 2 Tbsp butter
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt and pepper
- 1.5 tsp Parmesan cheese
- 2 tsp shredded cheddar cheese
- 1 Tbsp chives chopped, use half to garnish
- 1 tsp corn starch
Instructions
- Preheat oven to 375 F
- Peel and cube potato and put in small pot and cover with water. Bring to boil and cook 15-20 minutes or until soft
- Strain and mash potato
- Mix in milk and butter
- Season with garlic powder, onion powder, salt and pepper
- Add Parmesan, cheddar cheese, corn starch and chives
- Spray muffin tins and spoon mixture into 3/4 of the tin
- Bake for 20-25 minutes or until golden brown
- Top with some sour cream and chopped chives
