Pumpkin Zucchini Muffins
Ingredients
- 3 cups All-Purpose Flour
- 1 1/2 Tbsp Pumpkin Pie Spice
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 3 eggs
- 2 1/4 cups white sugar
- 1/2 cup vegetable oil
- 1/2 cup canned pumkin
- 1 Tbsp vanilla extract
- 2 1/2 cups grated zucchini
Instructions
- Preheat oven to 325°
- Grease and flour muffin pan.
- Add flour, pumpkin pie spice, salt, baking soda and baking powder to a bowl.
- Beat eggs, sugar, vegetable oil, pumpkin and vanilla extract in a second bowl until smooth.
- Stir wet ingredients into flour mixture, gently fold in zucchini.
- Bake muffins for 35-40 minutes in preheated oven.
- Allow to cool on rack for 20 minutes.
