Southern Style Potato Salad

  • 24 oz FFTS red bite potatoes
  • 1/4 cup chopped celery
  • 2 TBSP shallots chopped
  • 2 hard boiled eggs chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 TBSP pickled relish
  • 1/4 cup scallions chopped
  • salt & pepper to taste


  • Cover red potatoes with cold water in medium size pot and bring to a boil and simmer for 20 min or until done
  • Drain and let cool
  • Slice potatoes into ¼ inch rounds and place into medium size bowl
  • In separate pot bring water to boil with 1 tsp white vinegar
  • Once boiling place two eggs and slow boil for 15min (this can be done ahead of time)
  • Remove eggs and put in cold water and peel
  • Chop hard boiled eggs and add to potatoes
  • Add chopped celery, shallots, mayo, sour cream, pickled relish, scallions and salt and pepper to taste and mix all together
  • Serve as a side for your next BBQ! Enjoy!
