Twice Baked Sweet Potato

  • 1 Sweet Potatoe
  • 1 Tbsp. Maple Syrup
  • 1 Tbsp. Butter
  • 1/4 Cup Milk
  • 1/8 tsp. Cayenne
  • 1/8 tsp. Nutmeg
  • Salt and Pepper to taste
  • Pecans Optional


  • Preheat oven to 400°
  • Toss potato in oil and salt and pepper
  • Bake for 40 minutes
  • Slice the potato down the middle and scoop out the insides carefully.
  • Put the sweet potato mash in a bowl, combine with butter, syrup, milk, cayenne, cinnamon and nutmeg.
  • Whisk together until smooth.
  • Use a pastry bag to pipe the sweet potato mash back inside the skin (or you can scoop it back in)
  • Reheat in oven
  • Add pecans topping (optional)
