Rinse potatoes and slice into 1/3 inch rounds
Heat medium size skillet non stick on low and add sesame oil followed by potatoes (don’t overheat)
Cook on medium low for 5 minutes, add garlic and cook for another 2 minutes or until garlic begins to lightly brown
In bowl mix soy sauce, water, corn starch, rice vinegar, honey, red pepper flakes and ginger
Add mixture to pan and cook on medium for about 4 minutes (covered)
Uncover and add sesame seeds and cook for another 5 minutes to crisp up potatoes
Top with sliced scallions and enjoy!
