Cover red potatoes with cold water in medium size pot and bring to a boil and simmer for 20 min or until done
Drain and let cool
Slice potatoes into ΒΌ inch rounds and place into medium size bowl
In separate pot bring water to boil with 1 tsp white vinegar
Once boiling place two eggs and slow boil for 15min (this can be done ahead of time)
Remove eggs and put in cold water and peel
Chop hard boiled eggs and add to potatoes
Add chopped celery, shallots, mayo, sour cream, pickled relish, scallions and salt and pepper to taste and mix all together
Serve as a side for your next BBQ! Enjoy!
